Getting the perfect flood icing can be key to having beautiful cookies. It took me years and lots and lots of practice to get just the perfect royal icing for flooding. I’ve learned a lot and I’m excited to share my best tips on getting the right flood icing every time.
To thin out my royal icing I like to use a spray bottle. This helps control how much water I’m adding and I don’t have to worry about knocking over a water bowl. I also like to use a silicone spatula. These from amazon are my absolute favorite.
Place your royal icing in a bowl then spray a little water and mix and check your consistency. You are looking for that ribbon of icing falling off your spatula without any breaks. If not just right spray a little more in the bowl, mix and repeat!
