How to decorate an Ice Cream Puzzle Cookie

ICE CREAM PUZZLE COOKIE

YOU WILL NEED:

Cut-out sugar cookie dough

Royal icing

Icing colors – I use Americolor brand

CUTTERS: Ice Cream Puzzle Set from Kaleidacuts

TOOLS AND TIPS: 

4 tips #2

4 couplers

8 icing bags (4 icing bags for piping and 4 bags for flooding)

Parchment paper

Cookie sheet

Toothpick or scribe

Rainbow Sprinkles

Paint brush

Step 1:  BAKE THE COOKIES

Use a cut-out sugar cookie recipe to bake your cookies

Step 2: MAKE AND COLOR ROYAL ICING 

Make a single batch of royal icing then divide the icing into bowls and make four icing colors based on the guide below. 

Step 3: ICING CONSISTENCY

You will need to create outline/piping icing = think toothpaste consistency and flood icing = think maple syrup, according to the color chart below.  Once you have made all your icing colors and consistencies it’s time to put them in piping bags.  

COLORS YOU WILL NEED:

White Icing – outline and flood

Red Icing – outline and flood

Tan Icing – outline and flood

Brown Icing – outline and flood

Now that your cookies and icing are ready to go it’s time to decorate!

ICE CREAM CONE

OUTLINE

Step 1: Outline the cone with tan outline icing with a #2 tip on the piping bag. Using your scribe or an edible marker make 2 lines for the heart on the top ice cream scoop.  Outline both scoops of ice cream with white piping icing.  

FLOODING

Step 2: Fill the cone with tan flood icing.  Start from the outside and work your way toward the middle of the cookie.  Fill in the ice cream scoops with white flood icing. For the top ice cream scoop add rainbow sprinkles when flood icing still wet.    

Stop and allow your cookie to dry in front of a fan for 1-2 hours before flooding the next section.   

DETAILS

Step 3: Outline the ice cream cone and add the diagnal lines for the cone. 

Using brown piping icing to outline a “chocolate” drip at the top of the big scoop.  Fill in with brown flood icing.  

Using white piping icing and a paintbrush piping icing at the bottom of the scoop, then take the paintbrush and lightly brush towards the top of the scoop.  Dot the icing with the tip of the paint brush to get the realistic look of ice cream.  

Lastly, use red piping icing to outline the heart on top of the scoop and fill with red flood icing.  

This puzzle cookie fits perfectly in a 5×12 BRP Box Shop cookie box.  Add some paper shred and you have a perfect giftable!
