First off, what is it and how do I use it??
Meringue powder (MP) is made of cornstarch, dried egg whites, sugar, citric acid and some stabilizers.
MP takes the place of raw egg whites, which are mostly found in royal icing recipes.
MP has a long shelf life of 2 years if you keep in a dry area.
For probably the first 6 years of my business I used Wilton Meringue Powder! I never had any issues and it was convenient to pick up at my local Wal-Mart store. As I would chat with other cookie decorators I was introduced to Genie’s Dream Meringue Powder. I got a free sample from their website and gave it a try. Wowie Zowie. I fell in love immediately. I love how there wasn’t a bitter smell after you mix it. I also loved how fluffy (like marshmallow from the jar fluff) it was after mixing.
After piping and flooding with it I loved how shiny it dried when in front of a fan and best of all it tastes amazing on my sugar cookies. I’ve been using Genie’s Dream MP for the last 4 years and I love it so much. I buy in bulk, 10lbs at a time. MP has a long shelf life of 2 years if you keep in a dry area.
I definitely notice a difference using Genie’s vs. Wilton. Genie’s MP gives my RI a softer bit and has a lovely taste. Definitely give different brands a try and figure out what you like best!
